CONSCIOUS COOKING
The concept of "zero waste" is not new to the Indian kitchen—it's a tradition passed down through generations. Indian home cooks have long been experts at using every part of an ingredient, ensuring that nothing goes to waste while creating delicious, nourishing meals. In this class, I will teach you the art of maximizing every ingredient, showing you how to reduce waste while embracing creativity in the kitchen.
You'll begin by learning how to make fresh paneer (Indian cottage cheese) from scratch. But the process doesn't stop there—I'll demonstrate how the leftover whey, often discarded in other kitchens, can be transformed into flavorful soups or used to enrich dough for breads. We'll also explore the wonders of karela (bitter gourd), learning how not just the flesh but also the skin of this vegetable can be used to create an entirely new, flavorful dish.
In this zero-waste cooking class, you will learn to prepare:
Paneer Making
Cashew Paneer Curry
Karela (Bitter Gourd) and its skin
Food as a prayer.
Food as a gift.
Food for gratitude.
DETAILS
STRUCTURE: The classes start with an introduction of the concept in focus, followed by meal preparations and at last a delicious meal for everyone to relish. The menus for each class will focus on teaching how to cook an entire meal that comprises of atleast 5 - 6 easy to make dishes.
RESOURCES: All that the participants need to carry along is their apron. All ingredients and traditional tools used to prepare the dishes will be provided.
TIME: Cooking lessons can be fixed during any days of the week subject to availability and prior notice. The duration of the class will be approx. 3 hours which will include the cooking period as well as a meal to enjoy that ends the class on a sumptuous note.
FEES & PAYMENT: Rs. 3,500 per person. The payment can be made via bank transfer or in cash at the time of the class. The details for the bank transfer will be shared once confirmation for a class is received.
CANCELLATION POLICY: Cancellation is accepted up to 3 days prior to the date of the cooking class. If you need to reschedule the class, this will be based on my availability.
Please note that your reservation will only be confirmed once payment has been received. In the event of a cancellation within 3 days of the supper club or a no-show, a refund will not be possible
