Cooking with Amita

I hope to introduce you to traditional home cooking — which was done for three generations living together — to break the myth of “Indian food” being too oily, too spicy and too heavy. Here you will find Indian food using fresh ingredients, being balanced and being flavourful with each spice showcasing itself in the simplest of dishes.

WHAT YOU’LL LEARN

    • Learn techniques to use the spices, to elevate the flavors of your dishes.

    • Discover how to shop for the freshest spices.

    • Master the art of storing spices to preserve their potency.

    • Learn how to work with both dry and wet ingredients through techniques such as tempering, roasting, and frying, each enhancing the flavor of spices in distinct ways.

    • Understand the reasons behind using oils or ghee for different dishes, and how they impact the final taste.

    • Get familiar with traditional utensils that are essential for preparing authentic dishes.

  • Each class is thoughtfully designed as a complete meal, allowing you to learn how to create a balanced Indian spread — rich in nutrients, flavor, and vibrant colors, meant to sustain and nourish.

You'll also discover how different accompaniments can beautifully elevate and complement the meal, adding layers of texture and taste.

Food as a prayer.

Food as a gift.

Food for gratitude.
